El reto de octubre - donuts o berlinesas


The October 2010 Daring Bakers challenge was hosted by Lori of Butter Me Up. Lori chose to challenge DBers to make doughnuts. She used several sources for her recipes including Alton Brown, Nancy Silverton, Kate Neumann and Epicurious.

La vida es dura para aquellos que quieren conseguir una meta. Especialmente, cuando la meta es perder peso. Y más todavía si resulta que se tiene entre manos un reto "pecaminoso" como este: hacer donuts. Tengo que darle las gracias a Lori, de Butter me Up, por proponerlo.

Durante unos días pensé en no hacerlo pero... ¿cuándo voy a tener la oportunidad de hacer algo así? Y, más aún, ¿cuándo voy a tener oportunidad de intentar hacer una versión "aligerada" de algo tan bueno? Sí, aligerada. Y es que veréis: Audax, que sigue siendo mi héroe en esto de los retos, dijo que se podían hacer horneados, y que la receta daba unos resultados buenísimos, casi tan buenos como si se hacían los donuts fritos.

Entre eso y esta carita, ¿quién puede contenerse?


Los ingredientes y forma de hacerlo los podéis encontrar aquí, y se trata de la receta de Alton Brown.

La masa es como una masa de pan muy hidratada (es decir, pegajosa). Esta es la pinta que tiene en el bol de la KA justo después de que haya acabado de amasarse, y antes de levedar.


Desde más cerca, se puede ver cómo el glúten va haciendo de las suyas.


Y en esta, se puede ver lo pegajosa que es (y lo monos que son esos deditos rechonchos) :-).


Después de levedar (en Madrid ya va haciendo frío, así que tardó cerca de dos horas) la masa ya tiene una consistencia más fácil de manejar, aunque hay que enharinar bien la mesa y la masa. Se corta con un cortapastas o, si no tienes, un vaso de cristal (vale cualquiera, pero si es de Hello Kitty, te ríes más :-) ). Hay que tener cuidado de cortar con movimiento vertical, sin girar el vaso, para que luego el dónut quede bonito.


Por no compicarme mucho, hice berlinesas. Sobre todo porque al hacerlos horneados suben muchos, y lo más probable es que los agujeros "desaparecieran". Y además, porque me gustan más las berlinesas, rellenas de cualquier cosa, que los dónuts mondos y lirondos.

Después de cortarlos, se ponen en la placa de horno y se deja que leven de nuevo, esta vez unos tres cuartos de hora.


Y luego a hornear:


Y en tan solo 15 minutos... ¡¡¡TACHAN!!! Cuando todavía están calientes, se pintan con mantequilla derretida o, en la versión aligerada, con un poco de leche desnatada y se rebozan en una mezcla de azúcar y canela.



Y quedan con esta pinta. Es muy difícil que la imagen haga justicia al olor que había por toda la casa. Si os cuento que el maridín llegó a la cocina diciendo que se estaba mareando de gusto y ganas de comérselos, igual os hacéis una idea. Es que llevamos un mes de dieta bastante estricta. Yo le entiendo :-)


Pero lo mejor es cuando lo cortas y es entonces cuando todos los sentidos se ponen en funcionamiento. El olor, la vista, el tacto, el oido (poco) y el gusto... Madre mía, ¡¡¡el gusto!!!



Rellené la mitad con una crema pastelera y la otra mitad con una crema de cacao, ambas realizadas con leche desnatada, huevos, edulcorante y para la de cacao, con cacao puro desgrasado.

Solo nos tomamos medio dónut cada uno. Y vimos el cielo :-)

Y aun así, tengo que mejorarlo, con dos cosas:

1) pensé que utilizar harina de fuerza le vendría bien, al tratarse de una masa con levadura. Pero al tener tanto glúten, quedó un poco... "compacto". Los que lo probaron me dijeron que estaba muy bien, pero me parece que utilizando harina de la normal (no la de repostería) hubieran quedado más ligeros.

2) la masa necesita más azúcar. Posiblemente, si se fríen, el aceite cambia las propiedades organolépticas y queda sabroso. Al hornear, se necesita añadir más azúcar para que la masa quede con mejor sabor.

3) me quedé corta de nuez moscada (no me atreví a echar toda la que recomendaba la receta). O igual sustituyo por vainilla o ralladura de limón o alguna otra especie. Incluso un poco de canela más.

4) y cuando ya no esté a dieta, estas cosas rellenas de una jalea de fresa o frambuesa o incluso mango o la mermelada de piña y lima que tanto me gustó... sería colosal :-)

El resto de los dónuts (hice una docena y solo nos tomamos uno entre los dos) fue disfrutada por Irene, por su cuidadora y familia y por mis compañeros de trabajo. La nota media ha sido de 9. No puedo pedir más.

Bueno, sí. Poder comerme un par de ellos sin remordimiento alguno :-D

This month's challenge has come in a hard moment. Because Hubby and I are on a diet. And making donuts is not exactly what one would consider the more adequate thing to cook when on a diet.

But then, visiting the forums, I read Audax mention that the Alton Brown recipe for yeasted doughnts was fantastic baked, taste wise. And that gave me the little push I needed to participate in the challenge this month.

I worked on the Alton Brown recipe, then. The dough is quite tacky, as you can see in the pictures (those are my little girl's chubby fingers), but after the first rise (about 2 hours, Madrid is getting cold now) it's quite manageable, though it takes good flouring or the working surface and dought to work with it.

I didn't have a cookie cutter, and so used a regular water glass (my daughter's Hello Kitty glass) to cut them with a vertical motion (without twisting). As I was baking them, I didn't do any holes in them, because they rise quite a lot in the oven.

After the second rise (aprox. 45 minutes) they were ready to go in the oven, nad just 15 minutes later the house smelled like a bakery. I coated them with a bit of cold milk and cinnamon sugar. After a bit of cooling, I opened one up, and it looked just as good as it smelled.

Of course, it couldn't go without tasting. My Hubby and I ate half a piece, and were close to culinary heaven for a precious moment :-) After being on a diet for a month, it might have been self-suggestion, but the doughnut was soooo gooooooood :-)

My daughter, her care taker and my workmates enjoyed the rest of them, filled with english cream (half) and chocolate cream (the other half). And all of them rated them as a 9 over 10. What more can a happy cook expect? Well, yeah, being able to eat a whole doughnut without regrets :-)

  1. Eh... Cuando hablamos de compañeros de trabajo con derecho a degustación, deberíamos ampliar un poco más el concepto. Sin ir más lejos, en el edificio norte conozco de primera mano a alguien que...

  3. I think that ALL the Daring Baker's Challenges are going to have poor timing diet wise! :) That's why I invited people over after my attempt at cutting the recipe in half flopped. Great job baking them, I'll have to give it a try when I don't feel like standing over a pot of boiling oil, they seem to have turned out wonderfully!

  4. They look wonderful but yes, not a good recipe to follow when you are dieting! I found this recipe made a LOT of doughnuts so I sent about 2/3 out to my neighbours!

  9. Me encanta este idea de hornear los donuts. Comé casi tres de los que yo hice y no habría tenido tanto remordimiento después si no estuvieron fritos. Además, tus donuts se ven tan deliciosos! Muy buen trabajo con este desafío!
